Unfortunately, the Watches are so sensitive just raising your hands with a moderately high heart rate will trigger the watch and you'll hear the dreaded beeping sound. Testing from Joanna Stern also showed the Watches often would not trigger, even if you intentionally got yourself in a car accident, to which Apple disputes and said "Oh, you weren't testing it right." Of course, Apple will tout the Apple Watch as having a 1% failure rate™, but what this actually means is if billions of people have Apple Watches, millions of them will experience false positives.
